getting ready to install the fuel tank in my 86. I noticed both tanks I have are for the fuel injected G-bodies. Both tanks have the baffels and both sending units are for the electric fuel pumps.

The sending unit has a 3-wire weather pack
(pump +, ground, fuel gauge) <--i assume

My wiring harness is a single pink wire.

Will it work correctly if I just connect the pink wire to the fuel gauge wire on the sending unit? TIA

That will work just fine. I'd still put a matching weather pack on the cars in case you want to go FI later.

Would you like to sell the other tank and sending unit you are not using?
